Robert “Bob” Nesta Marley

This upcoming Saturday would have been Bob Marley’s 71st birthday. If you haven’t been underneath a rock the last twenty plus years, you know how much influence Bob Marley had, and continues to have, on our culture. You can even count the multiple Bob Marley quotes you see while scrolling down your Facebook, Instagram, and Twitter timelines every day.

As a young woman who loves being part Jamaican, and representing the Jamaican culture, I thoroughly enjoy how much people have continued to embrace Bob’s talent. When I’m not in the best of moods, I can always count on my Bob Marley playlist or Pandora station to lift my spirits. I will share my two favorite Bob Marley songs. The first one: “Is This Love” always makes me think of my husband and daughter. Reminds me as long as we are together, even with the bare minimum, I will always have and be surrounded by happiness and love. My second song: “Redemption Song” reminds me of how resilient and strong Black people are. Through everything we’ve seen and been through in our history and lives, we still stand. Bob also reminds us how real mental slavery is too. In light of it being Black history month this is perfect to share with all of you.

I wonder how much genius was left in this man when he passed away at such an early age? Can you imagine what music would be like if one of the greats, such as himself, were still around to make music? In a perfect world, the music world would be MUCH different, which means it could only be better. Rest easy and happy early birthday, Mr. Robert “Bob” Nesta Marley.

Fun Brie Fact: While typing out Bob Marley’s full name I said it in my head the way Matthew from the show, A Different World, says it when answering a question at the Campus All-Star Challenge. I’m sure all of my fellow A Different World fans remember that scene too 😉

Throwback (Music) Thursday

I didn’t realize Aaliyah and Sade share the same birthday until earlier this week. How I’ve never known this information before then I’m not sure, because Aaliyah and Sade, are two of my favorite artists. I’ve known for a while I wanted to share a throwback song for this Thursday’s blog post. Since their birthdays were less than a week ago it lined up perfectly for me to use one song from each of these ladies for timeless throwback music.

As a 90’s kid, Aaliyah was the definition of perfection so many girls like myself wanted to be. Her death is still one that hurts my heart all of these years later. Thankfully, as a musical artist, one thing that will remain forever is her music. On the other hand, I have always known who Sade was because my family listened to her music, but didn’t get into her music until I got older. I’ve heard the line “Sade makes music for grown folks” for many years, and it’s only since I have gotten older I understand what the adults meant. Sade makes music for people who are so deeply in love or have experienced deep love that it’s truly something a younger child wouldn’t grasp. In honor of their birthdays and throwback Thursday I will share my favorite song by each of these lovely ladies below.

P.S.- Apparently musical artists born on January 16th are drop dead GORGEOUS because…look at their faces!

Halloween (Theme Song)

Anyone who knows me knows Michael Myers is my favorite villain/scary movie serial killer. I know, it sounds weird to say I have favorite movie serial killer, but when I say that I mean the Halloween movies are so well done. Michael Myers, although scary and violent, is quite intriguing and mysterious.

However, of all the things Michael Myers is in the Halloween movies, the best part of his character is his theme music. See it’s much bigger than the serial killer himself in terms of me liking him lol. I have yet to hear a scary movie villain have theme music as well put together and eerie as Michael Myer’s theme music. John Carpenter was genius when chosing the movie’s theme music because all of these years later, after watching all of the movies countless amount of times, the music never gets old or loses its scary touch.

With this being the week leading into Halloween I felt it was only right to share the theme music with all of you. Enjoy the music and have a Halloween movie marathon sometime this week to get into the scary Halloween spirit!

“I Put A Spell On You”

Today is only the 12th day of October, but I’ve already watched the movie Hocus Pocus more times than I can remember this month. If you’ve ever seen Hocus Pocus (you better have seen it before) then I really don’t need an explanation as to why I’ve watched it so many times. It’s a great movie, with a great cast, a great plot and great music. To sum it up in one word it’s GREAT.

However I want to share the music aspect of the movie on this lovely Monday. Take a few minutes out of your day to watch and sing-a-long with the Sanderson Sisters. I guarantee it’ll make your day just a little better.

“The Moon And The Sky”

This song always makes me think about college. I listened to this song at least once a day my Junior and Senior year. Sometimes we find ourselves being connected to songs without having a particular reason, and this song is one of those for me. However, I do love Sade in general. I believe there is a timelessness and real-ness to Sade’s music. Every time I hear this song it’s like I’m listening to it again for the first time.

“Happy Birthday”

Today is August 11th, which means it’s my Uncle Michael’s birthday. My Uncle Michael has been one of my father’s my entire life and I don’t know where I would be without him and all of his unconditional love. I wish I was there to celebrate with him and go get some good food from Claire’s Korner! In honor of his birthday, and Stevie Wonder being the greatest artist in the world, I will share the classic Stevie Wonder “Happy Birthday” song with all of you.

Happy birthday, Uncle Michael! We love you so much and pray God blesses you to see many many more!

“Fortunate”

Maxwell is amazing. He is the definition of feel good music. I’ve had the pleasure of seeing him on his BlackSummersNight tour, and he sounds just as amazing live as he does on his songs. Did I mention I love Maxwell? Oh, well, it’s true. Now enjoy some beautiful Maxwell music on this Summer night. Fall in love with someone if you aren’t already in love, and if you are already in love, fall in love with them again.

“Beauty”

I love R&B music. I specifically love 90’s R&B when male and female R&B groups were everywhere making great music. So you will see a lot of 90’s R&B music/groups on my page for music days. This song came on my Pandora station the other day, and you know that feeling you get when you hear one of your favorite songs? This song does it to me every time.

Chicken Verde Enchiladas

Happy Cinco de Mayo everyone! I am having an all Mexican food themed appetizer, dinner, and dessert meal this evening. Our neighbors will join us, in addition to, bringing some Mexican themed beverages and side dishes. In the spirit of today I figured I would share what I am making for dinner, tonight, as well as one of my favorite Mexican dishes to make and eat.  That dish would have to be, Verde Enchiladas. To be more specific, the “verde enchiladas con pollo” from La Unica, on the north-side of Chicago. The first time I went to La Unica, was for my friend, Brittany’s birthday, I believe sophomore year of college. It was a surprise when we arrived at the location, I knew it was a grocery store, but had no clue there was a restaurant in the back. A restaurant that serves multiple Hispanic culture types of food. And you know the food is legit when the entire menu is in Spanish too.

Unfortunately, living in Montana means in order to get my authentic Mexican food fix, I had to figure out how to make it myself. I’ve searched for months to find a decent verde enchilada recipe, and thankfully taking a little piece of each recipe, in addition to adding my own ingredients, I have come up with a recipe that is pretty close to La Unica’s. To make this recipe you will need:

1 lbs tomatillos

2-3 chicken breasts

12 corn tortillas

1/2 white onion split into 1/4ths

1/2 block queso fresco shredded

1 tsp garlic (2 cloves)

1/2 jalapeno pepper

1/2 cilantro

3/4 cup corn oil (1 Tbsp per tortilla)

2 Tbsp grapeseed oil (or oil of your choice)

Seasonings for chicken

Mexican creme (to drizzle on top of finished meal)

In a bowl, clean your chicken with vinegar, rinse and drain all liquid. You will now season your chicken with your desired seasonings. I don’t measure my seasonings for the most part, but if I had to estimate how much of each to use, I would say use at least one teaspoon of each seasoning on your chicken breasts. I highly recommend using Adobo as one of your seasonings.

Now, you will heat your 2 Tbsps of grapeseed oil, in a pan over medium high heat, and brown your chicken breasts on both sides until both sides are golden brown. Once both sides have been browned, turn the heat down to medium-low heat and let the chicken breasts cook on the lower heat for about 20 minutes.

While your chicken is cooking, peel the husks off of your tomatillos and clean them in a bowl with warm water and vinegar until all of the stickiness from the husks has been cleaned off. Fill a medium sized pot a little over half way full with water, add your teaspoon of garlic to the water, and bring to a boil. Once the water is bubbling up to begin to boil, add your tomatillos to the water and let them boil until they are a pale green color. I usually let them cook for about 10-15 minutes.

Once the tomatillos are finished cooking add them to a blender along with half of your white onion, jalapeno pepper, and cilantro. Blend all of these ingredients together until they are smooth like a verde sauce. If you want your sauce to be a little thinner, add some of the water from the pot you boiled your tomatillos in to the blender. Add salt and/or pepper to taste. I prefer to use sea salt for my verde sauce.

Preheat your oven to 350 degrees. Your chicken should be done cooking by now. Take the chicken breasts out of the pan and put them on a large plate. Since they are still hot, take two forks or a fork and a knife, and shred the chicken on the plate until all chicken breast pieces have been shredded. Sit your shredded chicken to the side and let it cool off a little bit. While you are waiting for the chicken to cool off, in a separate pan on medium high heat, put a tablespoon of the corn oil in the pan, and let it heat up. Once the oil is hot, you are going to quickly put your tortilla in the oil on both sides for about 10-15 seconds. You want to be sure you aren’t cooking them until they are hard, because you won’t be able to roll the tortillas up without them breaking them if you do.

After you have done this for all 12 tortillas, stack them on a plate and set to the side next to your chicken. You will not shred your queso fresco, and cut your remaining white onion into pieces. Place both items in separate bowls and place next to your shredded chicken and shredded queso freso.

Get a 9×9 baking dish and wipe the inside of it with corn oil using a paper towel to help prevent any unnecessary sticking. Take a tortilla, place the desired amount of shredded chicken inside, roll it tightly, and lay the enchilada in the baking dish with the open end of the tortilla face down. Repeat and do the same for all of the tortillas. If your 9×9 baking dish is like mine, you will need to cut your last enchilada in half and place the two pieces in the corner of the baking dish.

IMG_2335Now that all of your enchiladas are rolled and placed in the baking dish, pour your verde sauce over them. I like my enchiladas with plenty of sauce so I use all of the sauce prepared. If you don’t like yours as “saucy” I would gradually add the verde sauce until you have the desired amount covering your enchiladas. Put your enchilada dish in the oven for 10 minutes. Once the 10 minutes are over, take the dish out of the oven and add your shredded cheese on top of the enchiladas. Place the dish back in the over for 5 more minutes, or until all of the cheese has been melted. When the dish is done take it out of the oven, sprinkle your chopped up onions on top of the dish, and enjoy! 🙂

“Stand By Me”

Ironically, I had this blog post scheduled to post on Sunday. But I woke up this morning, and read Ben E. King passed away yesterday, and felt it was only right to post it today instead. A beautiful song to remember a beautiful man. 

R.I.P. Ben E. King.

We’ve all seen the classic movie “Stand By Me,” but nothing quite compares to the song by Ben E. King. This is such a simple and beautiful song. All of these years later, and you can still find people from all generations and backgrounds who can sing this song to you word for word. If that isn’t the definition of timeless music and a great song, I don’t know what is. Enjoy this beautiful song and share it with someone you would love to have stand by you for the rest of time. I promise they will more than appreciate your loving gesture.
