Chicken Teriyaki Pineapple Bowls

About a year ago I saved a recipe video on Facebook for chicken teriyaki pineapple bowls. The recipe gave three ingredients to use but no details on measurements. I decided to wing it and see how it would taste. Although it tasted good I knew the dish could taste much better. Over the last few months I have tried many food combinations and different ingredients to achieve this final winning recipe. This is one of my family and friend favorites in our household. 

One of my favorite parts of this recipe is you can use whatever vegetables you prefer in this dish. I've made chicken teriyaki pineapple bowls with broccoli, red bell peppers, green bell peppers, onions, etc. and they've all been delicious. However, out of all of these combinations, our favorite combination is the broccoli and onion. We especially love the teriyaki sauce. This recipe ensures there is plenty of gravy for your rice and any leftovers for the next day. 

If you're lucky, you pick a very sweet pineapple and get to eat the delicious pineapple while you're cooking your meal. I'm currently working on a delicious drink recipe to use the sweet pineapple for so be on the lookout for that! In the mean time, enjoy this delicious, and easy, chicken teriyaki pineapple bowl recipe!

Ingredients

  • 2 lbs. skinless chicken thighs
  • 2 pineapples 1 pineapple per 2 people
  • 1 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 1/4 cup mirin (Japanese sweet wine)
  • 1/4 cup chicken stock
  • 1 Tbsp olive oil
  • 1 Tbsp cornstarch
  • 2 heads of broccoli
  • 1 medium yellow onion
  • 2 cups rice
  • 4 cups water measurement for the rice
  • red pepper flakes optional

Instructions

  1. Cut your broccoli florets off of the heads of broccoli into 2 inch sized pieces. Place in a bowl to the side

  2. Cut your onion into 1-2 inch pieces and add them to the bowl with the broccoli pieces. 

  3. Cut your chicken thighs into 2 inch size pieces and set to the side in it's own bowl. 

  4. Start cooking your rice now so that it will be done at the same time as your chicken teriyaki mixture.

  5. Heat your olive oil over medium high heat until very hot. Add your chicken thigh pieces to the pan and brown the chicken for 2-3 minutes. 

  6. Now add your soy sauce, honey, brown sugar, and mirin the pot with the chicken. Stir the ingredients together well and let the chicken cook for another 2-3 minutes. 

  7. Add your broccoli and onions to the pot and stir until well coated. Cover and cook your vegetables for 3-7 minutes. *How long you let your veggies cook depends on how crisp or soft you want your vegetables.*

  8. While the vegetables cook down, cut your pineapple(s) in half, the cut a square around the middle of each half, and using a spoon scoop out the pineapple. Put in a bowl to the side to eat for later or to throw into your chicken teriyaki if you want more sweetness. 

  9. In a small cup mix together your chicken stock and cornstarch until the cornstarch completely mixes into the liquid. Pour the mixture over the chicken teriyaki and vegetables and stir enough to coat the food. Cover the chicken teriyaki again and let cook for a minute or two so the sauce will thicken.

  10. Place your pineapple bowl halves on individual plates, scoop a cup of rice into each pineapple bowl, and then top with your chicken teriyaki and vegetables. 

  11. Sprinkle with red pepper flakes for a little spice and it's time to eat!

Halo Top Chocolate Peanut Butter Milkshake

Today is officially the first day of Summer. For those of you looking for a delicious and non-guilty dessert to cool you off this summer, try out this easy and yummy Halo Top Chocolate Peanut Butter Milkshake. 

I've recently discovered how much I enjoy Halo Top ice cream. Not only is it delicious, but it's guilt free! Most pints are 300 calories or less. Yes, the entire pint is only 300 calories! It's like finding a small piece of heaven on earth. They have so many delicious flavors and my new life goal is to try them all. Ha! But in all seriousness, it's so nice to finally have an ice cream us clean eaters can enjoy, without the guilt that usually comes with it. 

This recipe is perfect for a quick sweet tooth fix. You can even pour the milkshake into popsicle trays and make healthy popsicles for little ones. If you're wanting even more nutrients in this dessert, add a small banana to the ingredients list. I promise it's just as delicious!

Ingredients

  • 1 pint Halo Top Chocolate Ice Cream
  • 1 cup Almond Milk
  • 2 Tbsp Honey
  • 2 Tbsp PB2

Instructions

  1. Pour your Halo Top ice cream, almond milk, honey, and PB2 into a blender.

  2. Use the "milkshake" option and blend for 2-3 minutes.

  3. Pour your milkshake into your glass and enjoy!

  4. *If you want it with more ice, you can either add ice cubes to the blender, or place a freezer safe cup with your shake in the freezer for 10 minutes, or until ice chunks form.*

Black Bean & Turkey Veggie Soup

If you follow my Instagram account you probably know I have been into meal prepping and clean eating for a few months now. My go to meals have always been chicken thighs or salmon with veggies and quinoa. One day I was craving a black bean soup of some sort and decided to throw some ingredients together in a pot with black beans and see what happened. Well…it was amazing. I have since made the recipe a few more times and now that I have perfected it I want to share it with all of you. You can use whatever vegetables you like best because you really can’t go wrong with delicious veggies!

Prep Time: 20 mins | Cook Time: 20 mins | Serves: 5-6

1 lbs. Ground Turkey

15 oz. can Whole Corn

(2) 15 oz. cans Reduced Sodium Black Beans

1/2 bunch of Kale

1 large Red Bell Pepper

2 Jalapeno Peppers

1 large Yellow Onion (diced)

1 cup Cilantro

1 Tbsp Garlic

1 tsp Cayenne Pepper

1 tsp Cinnamon

2 tsp Salt

1 tsp Black Pepper

1 tsp Thyme

1 tsp Smoked Paprika (regular paprika is OK too)

1 Tbsp Honey

3 Tbsp Olive Oil

2 cups Water

*corn tortillas*

  1. Heat your olive oil over medium high heat for a minute or until really hot. Add your garlic, and diced up onions, red bell pepper, and jalapenos to the pot. Stir for 3 minutes or until soft and add your ground turkey to the pot. Break up and stir ground turkey until browned.
  2. Once your turkey is browned add your can of corn (drained), cans of black beans (NOT drained), cilantro, and spices to the pot. Stir well to combine ingredients and spices.
  3. Now add your water to the pot, stir to combine, then add your pieces of kale to the pot. Make sure the kale is mixed and covered with the soup liquid then cover pot and let simmer for 10 minutes.
  4. Taste your soup and adjust the seasonings to your own taste buds. I tend to like spice and always add more cayenne and black pepper to my mix.
  5. Brown 1-2 corn tortillas and dip in your soup for an even more delicious taste.

You can share this delicious recipe with others or meal prep for 5-6 meals. Remember you can switch and mix it up with your own spices and veggies in this soup. You can even branch out to different types of beans, however, I would research which beans are best for clean eating purposes.

Super Bowl Sunday-Funday

The day is finally here ladies and gentlemen…Super Bowl Sunday! I don’t know about you guys but this is one of the first Super Bowl match ups I’m excited to watch because I love both of the quarterbacks. I can honestly say whether Superman Cam walks away with his first ring or Peyton walks away with possibly his last ring, I will be a happy lady! However, what is any super bowl without the delicious snacks?! My family and I have our usual favorite get together/party snacks, but some snacks are so super bowl worthy they have to be made for multiple occasions. Here are the snacks I have prepared for today’s festivities 🙂

Chips & Queso:

Queso

I found this recipe on Pinterest a few years back and it’s actually quite popular. Most grocery stores even have an entire display dedicated to the popular “chips and dip” during super bowl time. However, for my dip I use Velveeta’s Queso Blanco and add 1 lbs. of seasoned ground beef (or turkey). Guys…it’s SO good. The instructions are easy: brown 1 lbs. of ground beef/turkey in a medium sized pot. Add your block of cheese cut into three pieces to the cooked meat. Constantly stir to prevent the cheese from sticking and burning until it has all melted together. Take your can of Rotel and mix into the cheese and meat. Pour into a bowl and serve!

BBQ Root Beer Chicken Wings:

YES- these wings are as yummy and delicious as they look in the picture. My husband saw this recipe on Tasty’s Facebook page about two months ago and it’s one of our favorites. If you would like to give it a try, head on over to Tasty’s Facebook page, like them, and try out this recipe (along with many of their other delicious recipes)!

The wings were still in the crock pot so I couldn’t get a picture with the sign lol.

Root Beer Floats:

These are pretty self explanatory. When are root beer floats NOT a good idea? Exactly. They’re easy, fun and delicious which are all the right description words for a successful dessert following yummy snacking foods. I am a huge fan of the individual IBC root beer bottles so guests don’t have to share, and wait to use one 2 liter bottle of root beer.

Banana Bread:

This honestly has nothing to do with the Super Bowl. I had overly ripe bananas and didn’t want to throw them away/waste them. Why not make some delicious banana bread to send home with our guests to eat for breakfast throughout the week? We’re already having root beer floats for dessert so the banana bread would be overkill. If you would like to make this delicious banana bread click here for the yummy recipe.

In addition to these delicious snacks for our Super Bowl get together our friends are bringing homemade quesadillas and nachos. Chili Mac & Cheese

I had every intention of making tacos for dinner one evening, not too long ago, and decided at last-minute it was too much work. To be fair, when we make tacos in the Jamieson household we go all out. Although it still would’ve been considered quick by timing standards, it would have been more effort than I cared to put in at the moment. It was then I decided to combine a bunch of ingredients in one pot which takes a lot less effort. Since I had already thawed out my ground turkey I decided whatever I was going to make was going to be along the lines of browned ground turkey and sautéed chopped onions. Once I was done combining the ingredients I found in my pantry and refrigerator I had a delicious chili mac and cheese dish right in front of me. This would be the second time I have whipped up a pretty impressive meal using the ingredients already in my house. Go me! 🙂 Now that I have made this recipe a second time, and according to my husband it was “just as amazing as the first time” it’s only right I share the deliciousness with all of you.

You will need:

1 lbs. Ground Turkey

4 cups Beef Broth

 8 oz. bag Cheddar Cheese

1/2 large Yellow Onion (diced)

1 Tbsp. Olive Oil

 1/2 lbs. dry Elbow Pasta

3 Tbsp. Taco Seasoning

1 tsp. Onion Powder

1 tsp. Black Pepper

Salt and Pepper to taste

*optional* 1 tsp. Adobo seasoning

  1. On medium-high heat saute the onions for 3-4 minutes. Add a pinch of salt to help soften the onions. Now add your ground turkey to the deep skillet and stir until golden brown.
  2. Once your ground turkey has browned add your onion powder, black pepper (and adobo) seasoning to the ground turkey and onion combination. Mix the seasonings in and pour your beef broth into the skillet.
  3. Bring the skillet to a boil, stir in your taco seasoning and pasta. Let it boil for 5 minutes, then cover and turn the heat down to a low simmer. Let it simmer for 20-25 minutes or until the noodles are soft. If you want more salt and/or pepper in the dish add it now.
  4. Pour your cheddar cheese into the pot and mix it in until it has all melted and evenly distributed.

Not only is the recipe easy, it is just as quick to throw together. Enjoy your meal because dinner is served!

Chicken Patty Melts

A few months ago, I created a last-minute meal I now call “chicken patty melts”. What is interesting about this meal is, I created it out of boredom, and laziness. I had taken chicken breasts out of the freezer earlier that day to let them thaw out. My original plan was to make a chicken stir fry, but once I thought about all of the prep work, it mentally exhausted me. (I wish I were being dramatic). It just so happened I had a craving for a melt of some sort. So I decided to wing it with seasonings and mixtures.

Can I tell you I have never been so happy to crave a particular meal, and create a dish better than I ever expected. Now that you know the story of how chicken patty melts were created in our household…here’s the recipe :-).

Prep time: 10 mins | Cook time: 20 mins | Serves: 2

2 chicken breasts

1/2 medium yellow onion

4 slices of bread (your choice)

3-4 Tbsp butter (I highly recommend Kerrygold)

1/4 cup Dales Steak Seasoning

Salt, Pepper, Onion Powder, & Garlic Powder (to taste)

4 slices of cheese (any type)

Step 1:

Clean your chicken breast and place both breasts inside a gallon sized Ziploc bag. Using a meat mallet, pound the chicken breasts into whatever thickness desired for your patty melt. I usually pound mine until they are about half of their original size. Set bag to the side.

Step 2:

Using a (deep) plate or shallow bowl, pour your Dale’s Steak Seasoning in the plate or bowl. Take your pounded chicken breasts out of the Ziploc bag and place each breast in the seasoning. Let it sit in the seasoning for 3-5 minutes per side. While each side of the chicken breast take turns to marinate, season the chicken, as desired, with your salt, pepper, garlic powder and onion powder. (There is already seasoning in the Dale’s Steak Sauce so don’t over season with your additional seasonings).

Step 3:

Cut your onions into whatever size slices you prefer. Place the cut onion slices in a bowl and set it to the side. Heat a skillet on medium high heat for about 2 minutes. Take 1 Tbsp of butter and move around the pan until it is all melted. Add your bowl of sliced onions to the sizzling butter and stir for about 3-5 minutes until they are softened and have soaked the butter up.

Step 4:

Heat your griddle to 315 degrees F (or use a large skillet on medium heat). Once the griddle is ready, melt 1 Tbsp of butter (you can add more or less if you want), then place two of your four slices of bread directly on the butter, add a slice of cheese to each bread slice, top each slice of bread and cheese with one of your cooked chicken breasts.

Step 5:

Add your last Tbsp of butter to the skillet until melted, put your last two slices of bread on the butter, add a slice of cheese, and top with your cooked onions on each slice of bread. Now take your slices of bread topped with the cheese and chicken breast, flip it over on top of your slice of bread topped with cheese and onions. Use your spatula to press the sandwich down some. This will help the cheese melt on everything and stick together when lifting the sandwich off of the griddle. Let your sandwich sizzle on the griddle until it has reached the golden brown color you want, remove and serve!

We usually eat our Chicken Patty Melts with fries. How can you ever go wrong with fries? 😉
