
Here we are, 7 months into the year 2020, and I’m sharing homemade cocktail recipes because COVID-19 still has the local bars closed. Well, a few of them opened for about 2 days, then Covid-19 numbers spiked and they were closed again. Sigh. Anywho, even if the bars were open, who doesn’t love a good homemade cocktail recipe? Not only are you in the comfort and safeness of your own home, but it’s cost efficient too. This delicious Peach Ginger Mojito recipe only requires 6 ingredients! Yes, SIX. So it’s not overly complicated which means you can impress company or yourself without a hassle.

Traditional mojito recipes usually call for added sugar to the drink for sweetness. In this recipe all of the sweetness comes from the ginger beer. For those of you not familiar with ginger beer, it’s a Jamaican carbonated drink, that has recently become more popular here in the states. Especially for mixed drinks. I must add, if you’re a fan of a subtle ginger taste, ginger beer is not the drink for you. You may also want to lessen the ginger beer in this peach ginger mojito and substitute with seltzer water.
One of my favorite parts of this recipe is that you can use a different fruit to change it up every once in a while. I’m thinking I’m going to try mango in the near future. Remember, no matter what fruit you use, the more fruit and the more you muddle, the more flavor your drink will have. But enough rambling about this delicious drink. Go ahead and follow the recipe directions below to make it yourself!

Peach Ginger Mojito
Ingredients
- 4 Peaches
- 2 16 oz. Ginger Beer
- 6-8 Mint Leaves
- 4 shots White Rum
- 2-3 Limes
- 3 Tbsp. Sugar
- 4 cups Ice Cubes
Instructions

Use 1/4 of a lime wedge to rub along the rim of your cocktail glasses. Pour the sugar on a plate and cover the lime rubbed rim with the sugar. Let it set by placing it to the side (still upside down in the sugar)

Peel and roughly chop your peaches. Add the chopped peaches and mint leaves to a pitcher.

Squeeze the juice out of your limes into the pitcher. If you prefer more lime taste use 3 limes instead of 2.

Use a spoon or whisk to muddle the peaches and mint in the lime juice in the pitcher. The more you crush/muddle the ingredients the stronger the flavors will be in your drink.

After you've muddled the ingredients pour the bottles of ginger beer into the pitcher. Let it sit until the fizz from the carbonation settles.

Add your desired amount of white rum to the mixture. Gently stir until all the flavors are well combined.

Put a handful of ice cubes in your sugar rimmed glasses and pour your mojito over the cubes. Swirl and enjoy!
