
June is the official month of summer. Although it’s felt like summertime many days here in Louisiana the last few weeks, the first day of summer is June 20th. We’ve already had multiple days of 80 and 90 degree weather here in northern Louisiana. Which means these mango kiwi mimosas has been on my mind for a while.
Well, to be fair, it’s been on my mind for much longer than a few weeks. One of my favorite restaurants here in the Shreveport area is “Another Broken Egg”. If you’ve been to this restaurant then you know how good the food is. But even better than the food is their deliciously creative breakfast and brunch mimosa flavors. Closer to the holiday season they offer an apple pie mimosa. Yes, you read that correctly. And yes, it’s as good as it sounds. But my all time favorite mimosa flavor they offer is the mango kiwi. It always tastes so fresh and has the perfect amount of sweetness. Those weeks and months of Coronavirus closing restaurants forced me to get creative and make this drink at home.
The best part of the recipe is that it’s fairly simple but packs a big spiked flavor punch. Seriously, these are the ingredients you need to create this delicious drink. The presentation is fancy too so you and/or your guests will be impressed.

But enough with the talking, let’s go ahead and get started on these mango kiwi mimosas!

Mango Kiwi Mimosas
Ingredients
- 3 Mangoes
- 4 Kiwis
- 52 fl oz. Simply Made: Orange Juice w/ Mango
- 1 bottle Moscato Spumante Champagne
Instructions

Slice the large flesh sides of your mangoes off, gently cut one inch cubes into the flesh of the slices (don't cut through the skin). Use a spoon to scoop the mango flesh out of the skin and place in a bowl to the side.

Slice the skin off of your kiwis, cut into fourths horizontally, then cut each slice into quarters. Place the kiwis in the bowl with the diced mangoes.

Pour 1 cup of champagne over the fruit and let it soak for at least 20 minutes.

Once the fruit has soaked, scoop 1/4 cup of the fruit into your champagne or cocktail glass. Pour your desired amount of champagne into the glass. Top with your desired amount of orange mango juice.

Garnish with a sliced kiwi and enjoy!
