
Spring is finally in the air! The weather has finally started to match the season here in Montana. This means I’ve been cooking and serving up lighter recipes and dishes for the family. This is the second green vegetable recipe I have gotten my oldest daughter to enjoy eating. I had to trick her and tell her it tastes like broccoli, but it paid off because she loved it! This lemon garlic asparagus recipe pairs perfect with my Honey Garlic Salmon. To complete the meal make a pot of rice or light whipped mashed potatoes. I promise you will love it!
My husband and I both are both huge fans of asparagus which is why I decided to create this delicious recipe packed with flavor. Baking asparagus is our favorite method of cooking it because it cooks evenly until tender with a little crisp. The flavors in this lemon garlic asparagus also coats the asparagus thoroughly and gives it a delicious light but bold taste. My favorite butter to use is Kerrygold. I’m not advertising for them specifically, but if you use butter be sure it is actually butter and not margarine or vegetable oil spread. There is a huge difference between the three and give drastically different tastes to your food.
One of my favorite aspects of this dish is it can be a meal prep vegetable side option as well. You can omit the butter and use only the olive oil to eliminate unnecessary calories and fat. It won’t taste exactly the same, because what does without butter, but it’s still SO good. Use whatever seasonings are your favorite on this lemon garlic asparagus dish as well. As I’ve said before, as long as you aren’t adding too much salt to your dish, adding more seasoning has never hurt anyone. Unless, you’re using cayenne pepper of course. Ha! But in all seriousness, don’t deprive yourself of the many seasonings created to spice our food up. Healthy doesn’t have to mean boring.
To make this recipe you will need:

Lemon Garlic Asparagus
Ingredients
- 1-1.5 lbs. Asparagus
- 1 tsp. Garlic
- 2 Tbsp. Butter
- 2 tsp. Olive Oil
- 1 Tbsp. Fresh Lemon Juice
- Salt *to taste
- Pepper *to taste
- Onion Powder *to taste
- Garlic Powder *to taste
Instructions

Pre-heat your oven to 400 degrees.

Rinse you asparagus and lay them flat on a baking sheet lined with foil or parchment paper.

Drizzle your olive oil over your asparagus and then season with your salt, pepper, onion powder, and garlic powder.

In a small pot melt your butter, minced garlic, and lemon juice.

Once the ingredients in the pot have melted and combined well pour the mixture evenly over your asparagus.

Shake the pan to generously and evenly coat the asparagus. Place the pan in the oven and bake for 20 minutes or until your preference of tender.

Squeeze a little more fresh lemon juice over the asparagus and enjoy!

Asparagus has become my husband and I’s favorite vegetable. We cook it very similar except I’ve never tried onion powder and we normally sprinkle a little parmesan cheese when it’s almost cooked.
