
Now that it is officially summertime this means my household is enjoying lighter and healthier dinner options. We love fish here at the Jamieson household. Actually, we love seafood in general. This move to the south has been glorious to our stomachs too. One of my favorite go to fish recipes for the girls and I is this Baked Lemon Cod. My husband isn’t much of a cod fan, but that’s ok, more fish for us. Ha!
This is a fairly simple recipe. Another reason I enjoy this Baked Lemon Cod recipe is because I can cook it in bulk for meal preparation too. This baked fish pairs well with a red sauce pasta and spinach if you ever need some meal prep ideas. The key to cod is to generously season each filet. Cod can taste extremely bland if it’s not seasoned correctly. The acid from the fresh squeezed lemon juice is what adds even more flavor to this dish. The pan searing step is what seals some of those flavors in and gives the fish a little color as well as texture. If you want to add even more flavor to this recipe you can add a tablespoon of butter to pan while it sears in the pan.

Before You Bake…
I will share one of my favorite seasoning combinations for this type of fish below. However, keep in mind that as long as you stay away from too much salt you can add whatever seasonings and as much seasoning as you wish. Once you make this recipe have some fun with it the next time around and try some seasonings you don’t normally use. Food is an experience. Baked Lemon Cod
Quick and flavorful baked cod recipe for the whole family!
Ingredients
- 1.5 lbs cod filets
- 1 lemon
- 1 Tbsp Olive oil
- 2 Tbsp Sea salt 1/2 Tbsp per side of fish
- 1 Tbsp Fresh Cracked Black Pepper 1/4 Tbsp per side of fish
- 2 Tbsp Paprika 1/2 Tbsp per side of pish
- 2 Tbsp Italian Seasoning 1/2 Tbsp per side of pish
- 2 Tbsp Garlic Powder 1/2 Tbsp per side of pish
- 2 Tbsp Onion Powder 1/2 Tbsp per side of pish
- Cayenne Pepper *optional
- Parsley Flakes *optional
- Grapeseed Cooking Spray *instead of olive oil
Instructions

Pre-heat your over to 350 degrees.

Generously season your cod filet(s) on both sides. Lightly squeeze half of your lemon fresh lemon on top of the filets and set to the side.

Heat a large frying pan on medium high heat. Add or spray your oil in the pan. Once the pan is hot enough (it’ll slightly begin to smoke) sear two pieces of cod in the pan at a time. Don’t over crowd the pan or the pan won’t stay hot enough.

Sear for a minute or two on each side or until slightly browned on each side. Place the seared pieces in a oven safe baking dish or pan spaced an inch or two apart.

Use your other half of fresh lemon to squeeze the remaining juice over your cod filet pieces. (Remember the more juice you squeeze the more lemon take it’ll have!)

Put your fish in the oven for 15-20 minutes. Or until pieces easily flake off. When they’re done you can squeeze a little more lemon juice or lemon zest on top of the fish if you’d like. Then enjoy!
