Broccoli Cheddar Egg Muffins

  • 6 Pete and Gerry's Organic Eggs
  • 1 cup Chopped Broccoli
  • 1/2 cup Shredded Sharp Cheddar Cheese
  • 3 Tbsp. Shredded cheese separated
  • 1/2 cup Diced Yellow Onion
  • 1.5 tsp Onion Powder divided into half teaspoons
  • 1.5 tsp Garlic Powder divided into half teaspooons
  • Sea Salt to taste
  • Fresh Cracked Black Pepper to taste
  • Avocado Oil Spray


  1. Preheat oven 350 degrees.

  2. Spray your muffin baking pan lightly with the avocado oil.

  3. Crack one egg into each muffin spot. Add your onion powder, garlic powder, sea salt and fresh black pepper.

  4. Use a fork to lightly whisk the ingredients together. Add your desired amount of broccoli and cheese to the egg mixture. *Be sure to leave space for the muffins to rise in the oven*

  5. Lightly mix the ingredients together in the muffin pan and bake the muffins for 18-20 minutes.

  6. When the muffins are done, lightly top them with a little more sharp cheddar cheese and fresh cracked black pepper. Put in the oven on broil for 2 minutes to let the cheese bubble and melt.

  7. Let them cool for a few minutes and enjoy!
