Happy Tasty Tuesday everyone! Although this year seems to be flying by already, because how is January almost over already? Most of us new year resolution people are still trying to stay on track and accomplish our goals. The most common new year resolution is always to be healthy and/or lose weight. I am one of those people and sharing healthier recipes with you all is the best way to keep me accountable. I also want to show people it’s possible to eat healthy and your food tastes good. One vegetable most people seem to like is broccoli. But who doesn’t love a delicious over roasted broccoli recipe packed with flavor and guiltless to indulge in? Exactly!

My over roasted broccoli recipe is one of my family’s favorites. My four year old said to me the other day, “Mom, I love broccoli but yucky to all the other vegetables.” Although I’m happy she loves her broccoli, this isn’t how any of this works, kid. You’re still eating the other vegetables too. I’m happy my family loves this as a side dish for dinner or just a snack in genera, butl I will tell you why I love this dish. It’s easy, quick, and healthy. One of the hardest parts of eating healthy is finding food that is quick but healthy to eat. The broccoli roasts in 15 minutes or less and tastes even better each time.

The oven roasted broccoli also works as a perfect meal prep side dish. I meal prep for my husband and I every week. Oven roasted broccoli is always a must for both of us. The hardest part is not eating them all while meal prepping! Especially my snacking culprit husband.

Oven Roasted Broccoli

Ingredients

  • 2-3 heads Broccoli Crowns
  • Avocado or Grapeseed Oil spray can
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 /2 tsp Paprika
  • Sea Salt to taste
  • Black Pepper to taste

Instructions

  1. Preheat your oven to 400 degrees. Line a baking sheet with foil or parchment paper. Spray your surface with your avocado or grapeseed oil.

  2. Cut the stems off of your broccoli crowns and cut your broccoli into no bigger than 2 inch pieces. (Don’t cut them too small because they will burn in the oven)

  3. Arrange the broccoli on the baking sheet so they are not overlapping. Spray the top of the broccoli pieces with your avocado or grapeseed oil spray. (This will help the seasonings stick to the broccoli pieces. 

  4. Season your broccoli with the onion powder, garlic powder, paprika, sea salt, and pepper. Tip- you can use as much of the seasonings as you would like. Avoid using more salt than necessary. 

  5. Put your broccoli in the oven uncovered for 15 minutes (20 minutes if you like them extra cripsy). 

  6. Take it out and serve as a yummy side dish or snack!

Kris and I celebrated our 8th wedding 💍 anniversary this weekend.
Today makes 8 years since we said “I do” 🤎 Wow.
We survived Snowpocalypse 2021 ❄️ and it taught me MANY things.
